Perfect for warm afternoons or as a make-ahead dessert, this recipe combines rich chocolate pudding-like chia layers with tropical mango freshness – and it’s allergy-friendly, too!

Ingredients
- 1 ½ cups milk (any kind – full cream, almond, oat, etc.)
- 3 tablespoons cacao powder
- 3 tablespoons maple syrup
- ½ cup chia seeds
- 1 ripe mango, diced
- 2–3 allergy-friendly biscuits, crushed
- 1 tablespoon grated dark chocolate
- 1 tablespoon roasted hazelnuts, finely chopped or grated
- Zest of ½ orange
- Pinch of sea salt
Method
1. Blend it smooth:
Add the milk, cacao, maple syrup and chia seeds to a blender. Blitz on medium speed for 20–30 seconds until smooth and slightly thick. Let it sit for a minute, then blend again for 10 seconds. This helps break up the chia seeds and gives a creamy, pudding-like texture.
2. Chill and set:
Pour into a bowl or jar, cover and refrigerate for at least 2 hours – or overnight if you can wait! The mixture will thicken into a rich, spoonable pudding.
3. Layer it up:
When you’re ready to serve, layer into glasses: start with chia pudding, then diced mango, followed by crushed biscuits. Repeat for a second round of layers.
4. Finish with flair:
Top with grated dark chocolate, a sprinkle of roasted hazelnuts, a touch of orange zest and a pinch of sea salt.
