• 75g flour
  • 1 tsp baking powder
  • 75g porridge mix
  • 50g caster sugar
  • 75g unsalted butter
  • 1 tbsp honey
  • 3 tbsp milk
  • Zest from half a lemon
  • 1/4 cup desiccated coconut


  1. Preheat the oven to 180°C

  2. Mix all the ingredients together well. The mixture should be sticky.

  3. Shape the cookies on a tray covered with baking paper

  4. Bake for about 25 minutes until golden.

  5. Once cooked place on a wire rack to cool at room temperature
